Just found this YouTube video about affordable destination weddings you might be interested in.  What's interesting is that the venues are in places which many associate with higher-priced locations, such as Europe, Mexico and the Bahamas.

For example, for a cheaper destination wedding Europe, the guest suggests renting a villa which can accommodate your guests (you may have to rent a couple or several villas depending on the number of your guests) and using the villa as your reception venue as well, thus saving money on the reception venue. To get cheaper prices, she suggests you go for the shoulder season in the Spring months of April or May, or Fall months of late September or early October.

She also gives a suggestion for a cheaper Mexico venue, the Hotel Desconocido, which is on Costa Allegra.
